Papaya Verte is run by self-trained chef Jaki Clibbon, an orphan of Vietnam who grew up in Melbourne, Australia and is rediscovering traditional Vietnamese flavours through travel, friendship and a little bit of trial-and-error.

On this course you will work directly with Jaki on up to 3 traditional dishes in either your own home kitchen or another venue that you will provide.  You will discuss a menu in advance that suits your dietary requirements and prepare a meal to serve to yourself, family or friends (up to 6 including yourself) upon completion.

All ingredients and specialist utensils will be provided.  As this takes place in your own venue, we ask that you have a working hob, microwave, strainer, large mixing bowl and clean sink (etc.), plus any sharp knives you would like to use.  If you do not have an item on this menu, please discuss this with us and we can make sure an alternative is provided on the day.

- Due to the nature of working with knives and other sharp tools, all students must be 18+ (or 16+ if accompanied by an adult).
